Haupia


Tonight I made haupia for the first time.
This coconut pudding, haupia, is a staple desert at every Hawaiian luau. I had to make it early for Thursday - our last Foster care class.
Haupia

Ingredients:

4 cups coconut milk
2-1/2 cups water
1-1/4 cups sugar
1 cup cornstarch

Instructions:

Combine the coconut milk and water. Stir until smooth. Add the sugar and cornstarch. Cook over low heat until thickened and shiny. If the haupia is grainy, you need to keep cooking the mixture because the fat in the coconut milk has not yet melted.

Ethan's skills keep growing


Ethan finally learned how to pump his legs on a swing yesterday - Sunday the 13th. So now he knows how to swing all by himself. This is major big accomplishment, when we had to push him before. Yay!

Madeline's 6th bday


Here's Madeline in her Scooby Doo ears and collar. She loves wearing this. She's obsessed with Scooby Doo. She got the Scooby Doo figures and the Mystery Machine from her grandma for her birthday. She was way excited to get these.


Here's Madeline's bday cake. She wanted My Little Pony. I found out that you can buy the cake toppers from Walmart separately and then make the cake yourself. I have done this a few times.

Here's Madeline, dressed as Scooby Doo, Eva dressed as Belle, and Ethan as Batman - all opening Madeline's presents.

We traded in our minivan for this....


2006 Suzuki Grand Vitara XL-7
It has just as many seats as our minivan though - 7 seats. We bought it on April 5th. It is nice - leather seats, seat warmers in the front, a moon roof. We've never had one this nice, so we are pretty excited about it.
