Haupia


Tonight I made haupia for the first time.
This coconut pudding, haupia, is a staple desert at every Hawaiian luau. I had to make it early for Thursday - our last Foster care class.
Haupia

Ingredients:

4 cups coconut milk
2-1/2 cups water
1-1/4 cups sugar
1 cup cornstarch

Instructions:

Combine the coconut milk and water. Stir until smooth. Add the sugar and cornstarch. Cook over low heat until thickened and shiny. If the haupia is grainy, you need to keep cooking the mixture because the fat in the coconut milk has not yet melted.

What made you want to try a Hawaiian dessert? All these years in Hawaii and I've just never had a taste for haupia. I like it okay from Ted's bakery in his Chocolate Cream Haupia Pie. :)

So I read on your blog a long time ago that you were thinking about adopting...but at the time my comment wouldn't go through the system... so I never got through to ask you about it. But now it looks like this one should go through...
